Yummy Banana and Maple Pancakes

Enjoy these delicious pancakes with a gluten free alternative! Swap out the bananas and substitute for other yummy alternatives such as nuts, strawberries or yoghurt and honey. Oats are incredibly nutritious as they contain over 10 different types of vitamins and minerals. They are also rich in antioxidants and are great at helping to control blood sugar levels. Bananas are great at topping you up on your vitamin C levels. They also contain lots of magnesium, which will do wonders for your skin! There is also a lot of potassium found in bananas which is great for your heart health and blood pressure. They also aid in digestion and leave you bursting with energy!

Yummy Banana and Maple Pancakes

Ingredients

  • 100g Oats (This ingredient and stage 1 can be replaced by gluten free flour)
  • 80g ground almonds
  • 200ml of almond milk
  • 2 overripe bananas, peeled and mashed (use a fork)
  • 2 tablespoons of maple syrup
  • 2 tablespoons of chia seeds
  • 2 teaspoons of cinnamon
  • 1 tablespoon of coconut oil, for cooking
  • A pinch of sea salt

Method

  1. Put the oats into a food processor and pulse until they create a dusty flour, can take around 2 minutes.
  2. Place the oat flour into a bowl with ground almonds, cinnamon, salt and chia seeds, mix well in order to remove any lumps.
  3. Once all the mixture has combined, add almond milk, mashed bananas and maple syrup and mix really well until the mixture forms a pancake consistency batter.
  4. Leave for 15 minutes for the mixture to thicken.
  5. Place a frying pan over a medium heat and add a tablespoon of coconut oil.
  6. Once the pan is warm, add a large tablespoon of the pancake mixture to the middle.
  7. Use the spoon to shape the mixture into round(ish) shapes.
  8. Leave the mixture to cook, untouched, for 2-3 minutes until the bottom has cooked.
  9. Flip the pancakes over and cook on the other side for a further 1-2 minutes.
  10. Continue steps 6-9 with the rest of your batter to create the rest of the pancakes.
  11. Once cooked, remove the pancakes and top with maple syrup OR date syrup is a good healthier alternative, along with sliced bananas or any toppings you desire.
